Recipe: Sicilian Chickpea Medley

2 Tblsp olive oil
1 onion
4 cloves of garlic, chopped
2 cups carrots, chopped
1 cup white wine
fresh ground pepper
-saute all together until carrots are soft

-add the following ingredients to the above mixture and cook through
1 head of escarole (chicory, bokchoy, or similar), pulled into pieces
1 cup raisins
2 cans chickpeas, drained
1-2 cups vegetable stock, as needed

1-2 cups small farfalle pasta ("farfalline") (or similar)
-boil pasta, drain, and add to the above mixture at the very end.
-stir/mix together, heat through, and serve
